Cuvée Mathilde
LocalityThe Château de Gourgazaud is situated in the "Cru La Livinière", in the heart of the MINERVOIS region, in the area called "Petit Causse".
Geography of vineyardThe grapes are grown on ancient decalcified terraces. The soil is acidic , poor in organic minerals , but rich in schist and quartz pebbles.
Grapes varietySyrah and Mourvèdre.
VinificationThe maceration of the entire berry takes place at controlled temperature (25° C) during 20 days minimum. The extraction of the tannins is conducted in presence of oxygen.
Tasting noteA nice deep brown - purple colour. A complex nose of blond tabacco and cinnamon. Full, fleshy, rich in mouth.
Food matchesGame, red meats, kidneys, sweat bread.Temperature : 16° - 18°C
