CABERNET SAUVIGNON

Known around the world, the Cabernet-Sauvignon is a famous variety of Bordeaux. Here in the Languedoc, the cabernet-Sauvignon gives elegant and subtle wines, a beautiful red color, with tannins lightly present but balanced.

Food matches
Its tannic structure and power allow it to accompany beef rib and game. Serve at 16 -18°C.

Vinification
The grapes macerate in whole berries for at least 20 days at a controlled temperature (25°). The tannin extractions are conducted gently and in the presence of oxygen.

Aging
In concrete vat.

The Cabernet Sauvignon develops finely spicy aromas, with always a side red fruits and roundness. As it ages, it gains in the complexity of aromas that reveal notes of cedar and tabacco.
