Vinification
The grapes macerate in whole berries for at least 20 days at a controlled temperature (25°). The tannin extractions are conducted gently and in the presence of oxygen.
Aging
In concrete vat.
Tasting notes
The Cabernet Sauvignon develops finely spicy aromas, with always a side red fruits and roundness. As it ages, it gains in the complexity of aromas that reveal notes of cedar and tabacco.
